Holiday Stove-Top Potpourri Mix

 

 Don't you just love the smells of Christmas!? One of our favorite scents is a homemade mix of berries, cinnamon and oranges simmering on the stove.

Holiday Stove-Top Potpourri Mix
1 whole orange or just the orange peel
1/2 cup cranberries
1 Tbsp. whole cloves
3 sticks of cinnamon or cup of small pieces of cinnamon

One batch stays good for weeks! Just add water and heat it on low whenever you want to fill your house with Christmas goodness.

Taco Pie Recipe

 

 I saw this today on Facebook it looks so good!

Ingredients:

1 sheet puff pastry
1 package Taco Bell seasoning mix
1 pound ground beef
1/2 cup chopped onion
1/2 cup salsa
1 cup shredded lettuce
1 medium tomato, chopped
1 cup sharp cheddar cheese, shredded
Sour cream, optional

Directions:

place puff pastry on the bottom of a greased pie tin.

In a medium skillet, cook beef and onions until beef is browned and cooked through. Drain. Add Salsa and taco seasoning. Cook until bubbly. Pour into crust. Bake for 25 minutes, or until crust is golden brown. Let cool for 5 minutes.

Top with cheese, lettuce, and tomatoes. Cut and serve with sour cream.

Apple Crumble Cupcakes



Found this the other day on Aldi's Facebook page and I wanted to share. They look super yummy!

Apple Crumble Cupcakes

Moist cupcakes filled with apples, applesauce and nuts. Recipe from HoosierHomemade.com
Ingredients
  • 3 tablespoons Countryside Creamery Unsalted Butter, softened
  • 1/2 cup Baker’s Corner Granulated Sugar
  • 1/4 cup + 2 tablespoons Baker’s Corner Brown Sugar, packed
  • 1 large egg
  • 1/2 teaspoon Stonemill Essentials Pure Vanilla Extract
  • 1 cup + 2 tablespoons Baker’s Corner All Purpose Flour
  • 1/2 teaspoon Baker’s Corner Baking Soda
  • 1/2 teaspoon Baker’s Corner Baking Powder
  • 1/4 teaspoon Stonemill Essentials Salt
  • 1/2 teaspoon Stonemill Essentials Ground Cinnamon
  • 1/8 teaspoon Stonemill Essentials Nutmeg
  • 3/4 cup Sweet Harvest Applesauce
  • 1 cup apples, diced, any variety is fine, I used Honeycrisp
  • Crumble Topping
  • 1/2 cup Baker’s Corner All Purpose Flour
  • 1/3 cup Baker’s Corner Brown Sugar, packed
  • 1/4 cup Southern Grove Nuts (walnuts or pecans)
  • 1/2 teaspoon Stonemill Essentials Ground Cinnamon
  • 3 tablespoons Countryside Creamery Unsalted Butter, softened
  • Glaze
  • 1 cup Baker’s Corner Powdered Sugar
  • 1 tablespoon milk
Instructions
  1. Preheat oven to 350 degrees. Place cupcake liners in muffin tin. This recipe makes 12 cupcakes, if you need more, you can easily double the recipe.
  2. Combine the ingredients for the crumble topping and set aside
  3. In a measuring cup or small bowl, whisk together dry ingredients, flour, baking soda, baking powder, salt and spices, set aside
  4. In a large bowl, beat butter and sugars until light and fluffy
  5. Add the egg, and then the vanilla, beat until well combined
  6. Measure applesauce, set aside
  7. Add half of the dry ingredients, alternating with the applesauce
  8. Peel, core and chop apples into small pieces, fold into batter
  9. Divide batter into liners adding about 1/4 cup each. Sprinkle with crumble topping and pat down slightly
  10. Bake at 350 degrees for 12-15 minutes or until a toothpick inserted in the center comes out clean. Cool completely
  11. Combine glaze ingredients in a small bowl, you may need to add a little more milk if the mixture is too thick.
  12. Drizzle over cupcakes

DIY Fall Corn Cob Wreath

While buying some winter pansies this week at a local nursery, I spotted a wonderful corn cob wreath. The price was too high at $15 for my wallet, so I decided to recreate it. Since I don’t grow corn, I had to purchase some, but it was only $4 for two bunches of Indian corn. I chose a larger bunch with five ears of corn in darker colors and a smaller bunch in lighter color.

You will need the following materials: 5 large ears of Indian Corn, 2  ears of small Indian Corn, about 30 inches of wire or a straightened wire coat hanger, an electric drill and wired burlap ribbon.

I started by snapping each large ear into three pieces (a total of 15 pieces) and then drilled a hole through each one. Make sure the hole you drill is large enough for the wire. Do the drilling over a piece of wood, so when the bit breaks through the end it doesn’t damage your work table.  Make a twist at one end of the wire before threading the corn pieces so they stay on. Once all the drilled pieces are threaded, twist the wire end pieces together to form a circle. Now attach the small corn pieces using some wired burlap ribbon (which I had on hand!).

Your wreath is ready for decorative seasonal use and will double as a pretty fall birdfeeder too!

Tobias Bass is only 10 years-old, but he is kind-hearted, selfless and wise beyond his years.
His younger brother has severe cerebral palsy and cannot go outside and play like other children. Because of his pain, Tobias was inspired to do something incredibly selfless. Your heart will be in your throat when you read this letter Tobias wrote for his little brother.

Tobias is only 10, but he has the compassion and wisdom of a saint. He wants to be a pastor when he grows up and he is determined to help his younger brother is cerebral palsy enjoy life.
